Minnesota-based Famous Dave's BBQ Restaurant has returned to Waukesha County, this time as a new counter-service location in Brookfield.
The beloved barbecue restaurant's latest concept soft-opened Monday at 15455 W. Bluemound Road and will have its grand opening Thursday, March 27, starting at 10 a.m.
The Brookfield location differs from the familiar sit-down-style Famous Dave's restaurants — such as the Waukesha restaurant that closed in 2016 — but goes back to the roots of the company's original counter-service store, according to Al Hank, the chief operating officer of the company.
Customers will find a full Famous Dave's menu of ribs, sandwiches, burgers and sides to order in or to-go at Brookfield's new counter-service spot. Brookfield's Famous Dave's location is the "newest iteration of what we believe to be a significant expansion model for the brand," Hank told the Journal Sentinel.
"You walk in, place your order, sit at a table, or take the food to go," he said.
Catering is also available at the Brookfield location.
This new counter-service concept in Brookfield is the first of many new Famous Dave's BBQ restaurants the company plans in its expansion to match how consumers have changed through the years, Hank said.
Before the pandemic hit in 2020, about 40% of Famous Dave's revenue came from off-site purchases like catering and to-go orders, Hank said. Now in 2025, about 60% of revenue comes from those off-site purchases, according to Hank.
Famous Dave's Brookfield is open daily from 11 a.m. to 9 p.m., according to its website.

BROOKFIELD, Wis. — A new bill could allow backyard chickens in every community in Wisconsin. The proposal would allow each residential home to have four chickens. But backyard chickens are not without controversy.
"Not in my backyard," said Todd Martin from New Berlin. "Chickens smell."
His friend Scott Malloy disagrees, saying he has friends who own chickens.

"I would be okay with it," Scott said.
We heard the mixed reviews again and again in Waukesha. But in Brookfield, Jennifer Slider is pushing for a state law on backyard fowl so she can have them on her property. She lives on two acres, and her family grows much of their own food.
"Like a little homestead without being out in the country. We have a big garden, and chickens are kind of the next step," Jennifer said.
Regulations on chickens vary depending on where you live, which is why the bill's proponents say they are pushing for a state law.
Back in Waukesha, residents can have up to four chickens regardless of lot size. But in Brookfield, you must have at least three acres. So, Jennifer can't have them.
This new bill would allow up to four chickens on every residential property. A similar bill has been proposed twice in the last two years and failed.

MIDDLETON, Wis. - The Brookfield Co-op boys hockey team remains on a mission to win its first Wisconsin (WIAA) Division 1 state championship.
Top-seeded Brookfield, 24-3 overall, is scheduled to face fourth-seeded Edgewood in a state semifinal matchup at Bob Suter's LEGACY20 Arena on Friday, March 7 at 10 a.m.
The Classic 8 Conference champion Stars, who will be making their second consecutive state tournament appearance, advanced with a dominant 4-0 victory over fierce, intra-league rival and traditional state powerhouse Arrowhead in a sectional semifinal.
Brookfield head coach Greg Copeland's battle-tested team finished as the state runner-up last year, falling to Notre Dame 3-1 in the championship game March 2, 2024. The high-powered Stars are riding the momentum of a 10-game winning streak heading into the tournament and have combined to outscore their opponents by a 61-23 margin during that stretch.
The Stars generated seven or more goals 13 times during the regular season, maintaining a critical, confidence-building 43-21 scoring advantage in the first period.
Brookfield's offensive attack has been powered by the experienced quartet consisting of Hamilton senior forward Connor Hillig (45 goals/46 assists), Menomonee Falls junior forward Cooper Simon (33 goals/55 assists), Brookfield East senior forward Adam Sexton (22 goals/29 assists), and Brookfield East senior forward Parker Dysart (22 goals/27 assists).
The stingy Stars' defense has limited the opposition to three goals or less in 20 games this season, recording three shutouts in the process. Menomonee Falls junior goalie Brady Ferrell has been a consistent, stabilizing force throughout the season, posting a 15-2 record with 424 saves, 45 goals allowed, and .904 save percentage in playing 879 minutes.

Ace Pickleball Club is bringing 17 courts to the long-vacant former Pick 'n Save space at the Ruby Isle Shopping Center in Brookfield, with plans to open the facility in August.
The location — the first in Wisconsin for the Georgia company — will be operated by Atlanta-based franchisee Embarq Group LLC. Mohammed Chaudhry, a principle with Embarq, said the company plans to bring at least three more locations to the metro Milwaukee area in the coming years.
“Milwaukee is a great city,” he said. “We feel like the pickleball market is underserved there. It seemed like a good opportunity."
Pickleball has boomed in the Milwaukee area recently, with Utah-based The Picklr and Arizona-based Pickleball Kingdom opening operations as well as the $2.5 million Premier Pickleball Center opening in South Milwaukee in late 2024.
Pickleball Kingdom planned to debut in the Ruby Isle space but that the cost to build out the facility in Brookfield “became prohibitive” for that company, leading it to find a different spot, franchise operator Doug Reigle told the Milwaukee Business Journal in April of 2024.
CBRE has been marketing the space at 2205 N. Calhoun Road since the Pick ’n Save grocery store closed in fall 2022.
Ace Pickleball Club plans to start building out the 45,336-square-foot space in about two weeks, Chaudhry said. The franchisee filed building and occupancy permit applications with the city in November, according to the city’s Inspection Services Department.
In addition to its 17 standard courts, the facility will have a dinking court for warm up and a pro shop and will offer clinics, drills, lessons and open play. A mezzanine area will let facility host corporate events, birthday parties and tournaments, Chaudhry said.
