PEORIA — Inside The Fox Pub and Cafe, red, white and blue are prevalent — but not in the way a newcomer might expect.
American flags are replaced by United Kingdom flags, and the typical American bar feel gives way to English pub-style charm, where visitors get a chance to experience a mix of both cultures.
The Fox, which celebrates its 15-year anniversary this month, brings authentic English food and flair. With special events and a rotating selection of craft beer, the restaurant offers a taste of the United Kingdom to those of us across the pond.
“Through the years, the changes and COVID, I feel like we’ve had to become new businesses over and over again through all those years,” owner Matt Rixner said. “But we’re still here. Sometimes it’s hard to believe.”
English-style pub promises craft beer and comfort food
Rixner opened the restaurant in 2009 alongside his mother April Cheesman and his stepfather Mike Cheesman, who moved from England to America in 1979. They noticed a lack of true English pubs in Peoria, where multiple Irish pubs dot the map.

“I saw the market and that was something that didn’t exist,” he said. “Really, across the country, you see lots of Irish pubs but you don’t see a lot of English pubs.”
Having already established a love of craft beer, Rixner saw The Fox as an opportunity to grow Peoria’s beer scene with a unique twist. He started with six handles of beer before moving to nine, and then 11. Over the years the pub’s selection grew, and today 25 different handles line the bar, with 20 of them on consistent rotation.
“From the day we opened, I always did craft beer before craft beer was cool, and people were really into it,” he said.
Rixner and his staff have become regular participants in craft beer events around the community, which Rixner said is one of his favorite elements of owning the pub.
“Just being able to get, you know, twelve or thirteen hundred people out for an event,” he said. “You’re like, 'Man, we put that together. How do we even do that?'”
Beer is one of The Fox’s specialties, but the menu has much more to give. The Fox offers standard pub fare — like its “A Taste of England” menu, which includes beer-battered fish and chips, curry and chips, bangers and mash and cottage pie. Dishes are given U.K.-inspired names, like the “Duke of Wellington,” a brisket dish topped with cheddar cheese, or the “Dicken’s Delight,” turkey with cheese and coleslaw on rye.
While a large portion of the menu subsists on comfort food, lighter options are also available, including salads and wraps with or without meat.
New menu items are added seasonally, with featured menus rotating about every two months. Autumn’s featured menu includes 12 new dishes with fall flavors like sweet potato waffle fry nachos, a brussel sprout and bacon quesadilla and caramel churro cake.
Beer, burgers and brisket:Dining Out: English breakfast prevails at The Fox
Casea Liverett started at The Fox more than three years ago as a server and worked her way up to general manager. Coming from the corporate world, she never expected to stay so long, but the restaurant’s staff and customers feel like a family.
“We just have a good time,” Liverett said. “We just all get along, and it makes it fun when we come to work and we don’t dread coming to work.”
'Appreciation for the community'
Some people hear the word “pub” and think The Fox is nothing more than a standard drinking hole, Rixner said. They couldn’t be more wrong.
While the restaurant is located in Parkway Plaza off Pioneer Parkway, it’s designed to feel like the kind of spot a person might find on an English city street, a refuge from rainy days or the go-to place to catch a game.
The pub garners crowds for English football — soccer in the U.S. — games, as well as the pub’s annual St. Patrick’s Day celebration. Rixner’s wife Cortney, known as the “Quiz Mistress,” hosts weekly trivia on Thursdays at 7 p.m
Like many bars, festivities for the new year are also a staple, but at The Fox, there’s a twist: Customers are encouraged to gather not at midnight, but at 6 p.m., accounting for the 6-hour time difference between the U.S. and U.K. New Year.
When Prince William and Catherine, Duchess of Cambridge married in 2011, the staff broadcasted the royal wedding on the pub’s television screens and served wedding cake to customers. Photos of the royal couple still sit on a table in a hallway, next to a full upright suit of armor and a framed copy of the Cheesman name etymology and family crest.
Although occasions like these have played a major role in establishing The Fox in Peoria, Rixner didn’t hold any special events for the 15-year anniversary. Instead of asking customers to give more money, he said, he wanted to give back.
He decided to do Spotlight Saturdays, choosing a local charity to donate 50% of profits from each Saturday during the restaurant’s anniversary month. Rixner did the same during COVID-19 lockdowns, and took to social media to gauge which organizations customers most care about.
“You want your customers to come in and spend money, but it’s not about that,” he said. “It’s about showing appreciation for the community that we’ve formed here.”
Bartender Josh Kalmas has been at The Fox for two years. He used to play hockey with Rixner’s son, he said, and the family-oriented, small-business feel he got from The Fox made him want to join the team.
He now collaborates with Leveritt on creating new cocktails for the featured menus. This winter’s additions are still being developed, but the pair teased they are working on hot drinks.
“It’s very home-y in here, inviting,” Kalmas said. “I’ve had people at the bar say you can have a conversation with anyone at the bar.”
Peoria food:'Something that tastes like home': Peoria Mexican restaurant celebrates 10 years
On a recent Friday afternoon, Peoria resident Jason Preis was one of those people, perched on a stool enjoying a beer and chatting.
Preis has been a regular at The Fox for more than 12 years, and has become good friends with Rixner and staff. He started coming when a coworker invited him to join her trivia team, but the welcoming atmosphere and the introduction to craft beer made him stay.
“Trivia was kind of the gateway, but just coming in — the food is great, the beer is awesome, the staff has always been amazing,” Preis said.
Preis said he brought his wife to the pub when they started dating, and it’s always one of his favorite places to bring friends visiting the area. Fish and chips is his usual meal, while his 4-year-old loves the mini corn dogs.
Since starting his journey with craft beer, Preis said, The Fox has helped him get to know others.
“If you’re here a fair amount, whether it’s for soccer or the beer events or whatever," he said, "everyone’s just really friendly and welcoming, and they kind of just recognize you.”

The school from Chillicothe, Illinois, won a vote against 20 other area schools. The Marching Grey Ghosts earned nearly 40 percent of the vote, beating out Washington (27 percent). There were 22,524 votes overall. Full results are below.

CHAMPAIGN, Ill. – The Illinois men's and women's cross country teams are ready for the NCAA Midwest Regionals on Friday, Nov. 15, at Bradley University in Peoria, Ill. The women's 6k will begin first at 11:00 a.m. CT and the men's 10k will follow at noon. CT.
The women's team is led by senior Halle Hill, who broke the 6k school record and collected Second-Team All-Big Ten honors with her 16th-place finish (19:43.7) at the Big Ten Championships. Hill's top finish this year came during the Fighting Illini Big Ten Preview when she finished second (20:11.5) in the women's 6k.
Two other Illinois women recorded top-10 program marks at this year's Big Ten Championships: sophomore Avril Andre who placed 32nd (fifth, 20:03.5) and senior Sam Poglitsch, who placed 62nd (ninth, 20:28.4).
The men's team is led by junior Alex Partlow, who has been the Illini's top 8k finisher at every meet this season, including a school record breaking performance and 30th-place finish (23:19.6) at the Big Ten Championships. Partlow's highest finishes this season came during the Badger Classic 6k (18:18.5) and the Fighting Illini Big Ten Preview 8k (23:51.1) in which he finished seventh at both meets.
Senior Tyler Cushing also cemented his name in the Illinois record book this season as he ran the program's eighth-fastest 8k in his 57th-place finish (23:45.5) at the Big Ten Championships.
At last year's NCAA Midwest Regionals in Stillwater, Okla. the men's team finished sixth out of 28 teams in the 10k, while the women's team finished 10th out of 32 teams in the 6k.

Freitag has been in the culinary industry for more than 30 years and has served as head chef at Michelin-star restaurants in New York along with various other cooking roles around the world. Freitag competed in season two of Food Network's "The Next Iron Chef," and has been a frequent judge on the reality game show "Chopped" since 2009.
Past Bon Appétit chefs have included Omaha Steaks Executive Chef David Rose in 2024, Top Chef fan favorite Fabio Viviani in 2023 and Chopped's Maneet Chauhan in 2022.
EP!C Director of Marketing Ashley Schreck said guests will enjoy a 4-5 course meal during the event with a variety of dishes showcasing Freitag's skills. Freitag will also hold a meet-and-greet where attendees can purchase copies of her book "The Chef Next Door: A Pro Chef's Recipes for Fun, Fearless Home Cooking."
Tickets are currently on sale for sponsors only. Sponsorship levels start at $600 and go up to $15,000. Sponsors giving $3,000 or more will also receive reservations to a VIP event with Freitag before the main event. Tickets for the general public will go on sale in January, Schreck said. Those who are interested can stay updated on EP!C's website, Facebook and Instagram.
