SAGINAW, MI – Baking was a favorite hobby throughout Carrie Morse-Roose’s childhood.
Morse-Roose went back to her roots this year experimenting with baking sourdough.
Suddenly, the community went nuts for it, she said. Her LGBTQ+ and woman-owned business, The Belgian Baker, officially began in February.
“Initially, I started baking for therapy. I’ve been in child welfare for nearly 20 years working public service, so it was more of a therapy for me,” Morse-Roose said. “Then, it just became a challenge. Everyone was doing sourdough, and I was like, ‘I’m going to do this,’ and I did.”
The Belgian Baker is a side hustle as Morse-Roose still works her full-time job employed with the State of Michigan.
Morse-Roose said she likes being able to test different flavors with her sourdough and flex her creativity.
In the summer, Morse-Roose said she consistently sold her products at the Thomas Township Farmers Market and has gained customer orders now that the market is closed for the season.
One of the most popular items right now are the sourdough flights, which include a plain mini loaf, a dill and aged white cheddar mini loaf and an apple spice mini loaf for $15.
Morse-Roose said customers have also been ordering a lot of the English muffins, chocolate chip cookies and Belgian waffles.
Everything Morse-Roose makes is crafted with sourdough, unless it’s a specific order for something else or a family recipe that requires yeast, she said.
“I do it because I love it and I make everything the way I would eat it,” Morse-Roose said.
Morse-Roose added she enjoys getting similar businesses together for pop-up events so they can all benefit.

SAGINAW, MI. (WJRT) - Big changes coming to the Saginaw City Council after last night's election.
Two incumbents lost their seats, while a third lost a write-in campaign.
Women will hold the majority at six to three.
We are checking to see if that's the first time in history.
We talked with two new council members today, who are looking to make sure all of Saginaw is part of its revitalization.
"The outcome I am sure is a little different from a lot of people's expectations, but the city of Saginaw voted and I am here for them," says Heidi Wiggins.
She is one of the newest members of the Saginaw City Council.
Losing seats in Tuesday's election were Mayor Pro-Tem Annie Boensch and George Copeland, Junior. Reggie Williams, who at first decided to not seek re-election, mounted a write-in campaign for a two-year seat. He lost that bid to Carly Hammond.
Also winning a seat is Jacinta Seals. Monique Lamar-Silvia was re-elected, meaning six women will be on the council.
"Women are great multi-taskers, so and we have empathy and think those are two things the city needs," Wiggins says.
And Wiggins feels what the city needs now is to make sure all sections of Saginaw are being treated fairly when it comes to economic development.
"A lot of the parts of Saginaw weren't being represented. I love what is happening in the downtown area, but there are other parts of Saginaw and I am here for that," she says.
"We have to come together to make some changes around here," says Eric Braddock.
Braddock will also be a newcomer to the city council after winning one of the five spots for a four-year term. He too believes the city has to find a way to make sure all parts of Saginaw prosper.
"We want things to be fair on each side of town, but we have to start working together," he says.
Wiggins has every intention of doing just that.
"Mediating, I am very good at listening. I am very good at interpreting what people want. I just want to bring a wholeness and a love for all the parts of Saginaw, and I think that makes everything better," says Wiggins.
And there is no waiting until January 1st to assume office.
The city council members will be sworn in and attend their first meeting on November 18th.
