Maybe it was the camaraderie he felt while working at a burger joint as a University of Kentucky student, or the rush of exploring new spots in big cities during corporate trips, but Dallas Rose wanted to set and share a table of his own. When the third-generation resident of Lexington, Kentucky, returned home to raise his family in 2017, he set out to open a restaurant that would honor local purveyors, add flair to the state’s rich bourbon culture, and pay homage to the international stature of the Horse Capital of the World. For seven years he hammered out the details with his director of operations and partner, Aaron Wood. And this Saturday, they open the doors to Mileta, a name that translates to gracious and nods to his Serbian heritage.

After breaking in the space in March, Rose teamed up with his wife, Courtney, and sister, Sagan, to take on the interior. “I approached it as if I were designing my home to accommodate 150 guests for dinner,” Rose says. “Most of all, we wanted the space to transport guests.” A lover of midcentury architecture and furniture, he scoured for natural stone, wood, and brass materials that would add warmth, subtle character, and imperfection without stuffiness. The focal point of Mileta, a long, curved marble slab aptly named Michelangelo from Quality Stone Countertops in Nicholasville, harkens to winding Appalachian creeks with its shocks of green, pink, and dark blue veins.
Although Mileta takes inspiration from places beyond Lexington, Rose keeps it grounded with ties to his favorite city. Playful portraits of loons, green herons, and bobcats from local artist Spencer Reinhard perch on the wall. Collected vintage family photos (some a hundred years old) celebrate the Bluegrass State, including a portrait of the iconic basketball coach Joe B. Hall. “Our city is full of fantastic artists and culture, especially given its size,” Rose says. “We want guests to feel like they are at a dinner party at a friend’s home with food and drinks that would stand up in any major city in the world.”

“There are a ton of bourbon-centric bars and restaurants in Lexington, so we knew, at a minimum, we had to have an extensive bourbon list,” Rose says. The whiskey appears not just in classic Kentucky pours but in unexpected cocktails like the Nitro Orange Drank, which combines Knob Creek bourbon, bergamot liqueur, amaro, and bright orange juice in a nitro draft machine.
The main dining seating’s earthy green takes note from the iconic Keeneland hue.
Chef Craig Becraft makes all of the restaurant’s pasta in the glass-walled room. Up to ten guests will be able to eat—and eventually take pasta-making classes—in the private space.

In a kitchen led by executive chef Alex Green, local ingredients play a role in pasta dishes and beyond. Spent grain from Castle & Key distillery stars in sour mash grains, prepared as a risotto, alongside roast chicken; Hackleback caviar from Kentucky sturgeon and crème fraîche from Kentucky cows top a crispy potato appetizer.

A peek inside the Rose Room, which will open in December. After visiting a curved bar in Dubai, Rose wanted to bring the bending walls into Mileta as an additional cocktail lounge and space to host private events. On the lithographic wallpaper, whimsical woodlands unfold with waterfowl and prancing deer. “With the mirrored wall adjacent to it and the scale of the wallpaper, it looks like you’re going through a portal.”

The Kentucky Football Coaches Association on Wednesday announced its district players and coaches of the year, according to a vote of its membership.
From Lexington, Sayre’s Brock Coffman, Lexington Christian’s Saxton Howard, Tates Creek’s BJ Evans and Frederick Douglass’ Aveion Chenault were recognized as their respective district players of the year.
Among the coaches honored were Sayre’s Chad Pennington, Lexington Catholic’s Nick Baisch and Tates Creek’s Jonathan Hawks.
Coffman, a senior Ohio commit, has topped 1,000 yards receiving and also leads the Spartans in scoring with 22 touchdowns. Howard, a senior dual-threat quarterback, has rushed for 16 TDs and thrown for nine more. Evans, a junior running back, has 1,702 yards and 20 TDs rushing. Chenault, a senior Western Michigan commit, has 12 TDs receiving and a kickoff return TD.
The KFCA district player and coach of the year honors are a precursor to its class-by-class player and coach of the year awards that are typically announced during the KHSAA’s state championship games where each district honoree will receive his award.

In recent federal elections, claims of irregularities and fraud raise concerns among voters who want to be certain that their ballots count.
One reader seemed to share that concern when they reached out to the Herald-Leader with this question through our Know Your Kentucky series feedback form: “Is it possible to request a photocopy of your filled out and submitted Kentucky ballot form?”
It’s an interesting question, and one we posed to the offices of the Kentucky Secretary of State and the Fayette County Clerk. Both officials are responsible for managing elections at the state and local level, respectively.
Put simply, the answer to this question is no.
This is because, in American elections, ballots are meant to be kept secret. The goal is for voters to have the freedom to vote however they wish — free from fear, coercion or intimidation.
In fact, as explained by Kentucky Secretary of State spokesperson Michon Lindstrom in an email, “we have no way of knowing whose ballot is whose once they cast their vote.”
Fayette County Clerk Susan Lamb echoed a similar message.
“While it sounds like it would be an easy ask, the truth is the ballots once cast through the scanner are not identifiable to a specific voter,” Lamb wrote in an email to the Herald-Leader. “The purpose is so each voter can cast their ballot in secrecy.”
Now, while you may not be able to get a photocopy of your voted ballot, you are free to snap a selfie with it at your polling place after you’ve voted. Just know there are few caveats and rules about the practice.
The procedures and rules for our elections are established by state law under Kentucky Revised Statutes Chapter 117.
The process for counting traditional ballots is detailed in KRS 117.275. There are also distinct rules for counting mail-in absentee ballots established by KRS 117.087.
When votes are counted at any precinct, any candidate or slate of candidates and their representatives are allowed, under state law, to witness and check the count. This includes members of the news media.
As soon as the polls are closed and the last voter in line has voted, the voting equipment is locked and sealed to keep it from operating further. If a piece of voting equipment stops working, election officers similarly lock and seal it, then record the numbers shown by the public counter, as described by KRS 117.215.
KRS 117.275 establishes, “the county board of elections, or its designee, shall count and tally the supplemental paper ballots that have not been tabulated by automatic tabulating equipment at the precinct.”
This can be done either manually or by using tabulating equipment certified by the State Board of Elections.
The results of the vote tally are certified by the county board of elections, to the county clerk and all the way up the chain to the secretary of state. This year, the deadline for the county board of elections to certify the total number of votes to the state office is Friday, Nov. 8, also known as canvass day.
